A Spring SNOW day. Not what I had planned.
Typically spring is cool, rainy, and just plan muddy. But, it’s also the hectic time right before the big push for planting season. Planting season can be fun, but stressful, and leaves little time for relaxation. Meals are often simple and quick, so we can get back outside and finish the project at hand.
Well, today, ALL of our spring projects where put on hold. This weekend we had TWO full days of freezing rain and heavy wet snow.
So what do you do when your best bet is to stay inside? Ummm, stay inside!
We made the best of the weather and made meals that where a little more time consuming. Like stuffed mushrooms, and homemade cast iron blueberry cobbler.
This morning we made country fried pork steak with sausage gravy.
We planned on making a blueberry pie this afternoon (which turned into blueberry bars and blueberry crisp),
and to tie it all up this evening we made a delicious cumin rubbed pork tenderloin.
But, we didn’t just cook all day; we took naps, watched movies, and also took the time to get a couple inside projects done.
When Mother Nature gives you a day off, TAKE IT!
